Tacos

Tacos — tortillas folded around fillings — are Mexico's most iconic food and one of the world's most consumed street foods. The word 'taco' predates European contact; indigenous Mexicans used tortillas as edible utensils long before the conquest. The variety is staggering: tacos de canasta (basket tacos), al pastor (spit-roasted pork with pineapple, influenced by Lebanese immigrants), de carnitas, de barbacoa, de pescado (Baja fish tacos). Mexico City alone has an estimated 60,000 taco stands. Tacos have conquered the United States — Taco Bell serves over 2 billion tacos annually, though authentic Mexican tacos bear little resemblance to them. October 4 is National Taco Day in the US. The global taco market is worth over $20 billion.
